our story

For the love of all things bread related...

 

Founded in 2018 by Josh Freed and Jill Gardner, Freed's Biscuit Company is a product of Josh's love for all things bread related.

 

Josh was born into a Jewish family from Queens, NY (later relocating to Rockville, MD.) He was first introduced to cooking by his Father who owned and operated a catering company and a personal chef service. After attending Johnson & Wales Culinary School in Rhode Island, Josh went to work for the family business, servicing a star-studded client list that included pro athletes from the Washington Nationals and Washington Wizards.

Over the course of his culinary career, Josh worked with restaurants across the globe, including numerous award-winning restaurants in the USA, Hungary, and Canada. After moving back to the D.C. area, Josh served as the Training Manager for a growing D.C. restaurant group, where he managed operations training  for 16+ restaurants. This was where he met Jill. 

Jill worked in recruiting for the hospitality industry for the last 15+ years. She spent a few years with The Inn at Little Washington before taking on a role as Director of People + Culture for a growing group that led her to make the commute to Washington, D.C.. After a few years she partnered with the owners of Founding Farmers to launch a recruiting business called The Talent Shop. Jill placed numerous managers and C-level Execs in various restaurants around the country, all while helping Josh to build up Freed's Biscuit Company. She sold her recruiting business in the fall of 2023 and joined Josh full-time in the biscuit business.

All it took was one rainy morning in the Spring of 2018 of making homemade biscuits and gravy for Josh to remember his love for the kitchen.

A week later he was signed up for the local farmers market.

And the rest, as they say, is history...
